Fruit Leather

Katie made this fun and simple apple snack recently – it does not require much active work, but start it early in the day because the leather may require a long time in the oven.

Ingredients

  • 4 c apples chopped into large chunks
  • 1/4 cup lemon juice
  • 1/2 cup water
  • 2 Tblsp honey
  • 1/2 tsp cinnamon

Preheat oven to 170 degrees. Line two baking sheets with waxed paper.

Core apples and chop into large chunks. As you work, toss the freshly-cut chunks in lemon juice to reduce browning.

Add apples, water, honey, and cinnamon to a stockpot. Cook over medium heat. When apples are tender, mash them slightly with a potato masher and cook for 5 minutes more.

Pour cooked mixture into a food processor or blender, and puree.

Divide the puree evenly between the two pans and smooth out with a spatula.

Bake in the oven until the leather is slightly tacky and no longer wet, usually at least three hours – time will vary based on how thick your mixture is and the exact temperature in your oven. Rotate the pans every hour to promote even drying.

Allow the leather to cool and cut into desired sizes with a knife or pizza wheel.
